    Smile Moist Banana Bread

    Have some overripe bananas (in my case, they were very overripe)? Don't throw them out, put them to good use! I made this banana bread last night, and it's simply delicious. The secret to the recipe? The sour cream! It keeps the bread moist, without giving it an off flavor (really, it doesn't!).

    Moist Banana Bread

    Ingredients:

    • 1 c. sugar
    • 1/2 c. shortening or butter
    • 2 eggs
    • 1/4 c. sour cream
    • 1 tsp. baking soda
    • 1/2 tsp. salt
    • 2 c. all-purpose flour
    • 3 very ripe bananas, mashed
    • 1/2 c. walnuts, chopped (optional)


    Method:

    • Preheat oven to 350 degrees F
    • Cream sugar and shortening, then add eggs
    • In a separate bowl, combine the dry ingredients
    • Add sour cream and combined dry ingredients alternately
    • Mix in the mashed bananas
    • Fold in the nuts, if desired
    • Bake in a greased bread pan for 50-60 minutes
    • Remove to cooling rack immediately after baking

    It's been awhile since I made banana bread, but the bananas I had hanging up (I use a ribbon and one of those stick on hooks on the kitchen walls to hang them) were starting to peel themselves, so I made up a batch of banana muffins tonight. Feeling a bit in the spirit of fall, I added some cinnamon spice mix to the batch and they turned out wonderfully. These will be great for breakfast in the morning!

    Take a yellow, spice, or white cake mix; stir in your mashed bananas, add the oil and 1/2 the water and bake accordingly. Gonna go do that now. Thanks for the suggestion.

    Your recipe sounds really good! I will have to try it. My sister gave me a recipe for pineapple banana bread that is really good too. I just love banana bread!

    WWEEELLLLLL WE are waiting for the recipe, kiddo. Please share it with us.

    I made a banana-peanut butter spice cake today. I took 2 boxes of banana bread mix, 2 ripe bananas and a soup spoonful of peanut butter, 1 tsp. cinnamon, 1/4 tsp nutmeg, 2 dashes of ginger, 2 dashes of ground cloves. Put it all togther according to directions for the banana bread and baked it in a 9x13 pan for 45 minutes. Not much is left now after the kids found it. It is very moist.

    Sounds delicious Kim, please share the recipe! I bought some flavoring to try out some biscotti recipes, I'll let you know how they turn out when I make them. I've been really getting into teas this year, in lieu of soda, so I'm hoping these will go well. Yum!

    Sorry ladies, I have just seen this post. I am really needing new glasses. LOL

    Pineapple Banana Nut Bread

    3 cups flour
    2 cups sugar
    1 tsp cinnamon
    1 cup chopped pecans
    2 eggs (beaten)
    1 cup oil
    2 cups ripe mashed bananas
    1-8oz can crushed pineapple
    1 tsp vanilla flavoring
    1 tsp banana flavoring

    Combine dry ingredients. Stir in nuts and set aside.

    Combine remaining ingredients and add to dry. Stir until moistened. Pour into 2 greased and floured loaf pans and bake at 325* for 65 minutes.
