I sometimes add red radishes and onion (could use purple onion for color)

I always get wonderful compliments on my simple slaw: finely chopped/shredded cabbage, shredded carrots (be careful to not get too much, just a little is best), and chopped tomatoes. I make my own dressing: equal parts of sugar and vinegar; double amount of mayo; mix together well (might need more mayo to get right consistency); salt and pepper to taste. Toss with cabbage and carrots. NOTE: Add tomatoes at the very end, and gently toss into slaw. Let refrigerate for several hours. I have tried other slaw recipes, but always return to this simple one.

Thanks for posting your coleslaw recipe - I've been using Marie's All Natural Coleslaw Dressing, but the bottle is always too much for me to use! I'll have to try yours, it sounds simple and delicious!
