    Talking Zucchini Pickles and Relish

    I made my first batch of zucchini pickles this morning! The recipe was from my Complete Book of Home Preserving book by Ball, and can also be found on-line, here:

    For mine, I used my food processor's cutting blade. It's slices just a bit thinner than 1/4", but it gets the job done, and fast! I also added 1/8th of a rounded tsp of pickle crisp, though the recipe doesn't call for it.

    Since these turned out so well, I'm thinking about trying another zucchini recipe... maybe some relish? Hmmm...

    I made a few substitutions, to mine. I didn't have fresh bell peppers, but I did have water packed fire roasted ones in the fridge to use up, so in they went. I also didn't have horseradish (don't care for it much), and didn't want to open up a jar of hot peppers just to use one or two of them, so I substituted a tablespoon each of red pepper flakes and cayenne pepper. I think that after this weekend, we should be set on pickles/relish for a bit - Yum! Though... I did see a recipe for corn relish that I wanted to try... well, they do make great gifts!
