I'm looking to cook up a big batch of seasoned meatballs, and then freeze a bunch of them for later use. Anyone have a good meatballs recipe that I could use? Thanks!

I had purchased some good sausage meatballs in the frozen section of the grocery store not too long ago; so today I bought some sausage links in the refrigerated meats department. I figure that I can cut them open, form them into little meatballs, maybe with some extra seasoning, and then cook 'em up in a skillet.![]()
That's a good idea. As you cook them, you can add your favorite BBQ sauce and some grape jelly. It will be delicious. Store-bought meatballs do have additives in them, so if you want "pure" make your own. Here is a recipe I use:
INGREDIENTS:
* 2 pounds lean ground beef
* 1/2 to 1 pound ground pork
* 1 cup fine dry bread crumbs
* 2 small potatoes, cooked and mashed
* 1/2 cup grated onion
* 1 beaten egg
* 1 1/2 teaspoons ground ginger
* 2 teaspoons salt
* dash pepper
* 3 Tbs. grape jelly
PREPARATION:
Combine meat, bread crumbs, mashed potato, onion, egg, and seasonings in a large bowl, mixing well. Form mixture into small, walnut-sized balls. Heat some olive oil in a deep heavy skillet over medium-high heat; brown meatballs on all sides, turning gently as they cook.
*** If you want to make them Italian, add 1/8 to 1/4 cup of Parmesan cheese, 1 tsp. garlic powder and 1 tsp. Italian mixed spices.
Whether you think you can or think you can't.....you're right.

I tend to buy all natural, preservative free, etc. products, so I'm not too worried about the additives, though they're so much more expensive than making them at home. I really like the sound of your recipe, and it's giving me great ideas for the sausage ones too - will definitely have to try the Italian version. Yum!
Thanks for the meatball recipe Trudy! I have tried the frozen ones and would prefer to make my own... less expensive and much better tasting. Sounds delicious!![]()

It's true, the meatballs (frozen) found in the markets usually contain fillers and once cooked sometimes lose flavor. I rarely make them though. Subway now offers pizzas and my favorite topping is their meatballs. yummy!!
These are quite good! I didn't have any grape jelly on hand, so I added a couple of smashed grapes instead. I also used crystallized ginger rather than powdered, so I figure between the two the flavors and sweetness would all be there... plus, it's what I had on hand.The Italian version is a must try!

Trudy, I "rediscovered" this recipe last night, and just wanted to thank you again for sharing it. I didn't have any pork on hand this time, so I omitted it and reduced the bread crumbs by about a quarter cup, but left the rest of the seasonings at their full measurements. I also added about a teaspoon of garlic, and a teaspoon of red pepper flakes to the mixture. Delicious!
It's been about a year, and I keep coming back to this recipe whenever I make meatballs (the last time was about a year ago). Yum, yum, yum!
I must admit, my favorite meatballs are frozen ones from supermarket (Roseties - sp?) I add them to spaghetti sauce and simmer for a while.
