    Lightbulb Mashed Potato Pancakes

    Mashed potato pancakes are a wonderful way to use up leftover mashed potatoes! Simply heat a little oil in a skillet, grab a big spoonful of the mashed potatoes, flatten it out to about a pancake's thickness, and then plop it on the skillet! Brown on both sides, and enjoy! The end result is much like a hash brown, and is great with ketchup!

    Some pancake flour mix (about 1/2 C for 2 C potatoes), an egg and grated onion makes them real good. I usually fry them in bacon grease (I'm a Southern cook) for extra flavor. DOUBLE YUM for sure.

    My mashed potatoes include potatoes (w/ skins!), milk, lots of butter, garlic, bacon, cheese, salt, freshly ground pepper, and fresh parsley (dried, in a pinch). Yum!

    When the potato pancakes are brown on one side, turn over and place a piece of cheese on the browned side to melt while the second side browns. Yum, Yum!

    That sounds delicious!! I will try this.. my daughter loves potatoes and cheese.

    OMG, Trudy, I took your recipe, added in some shredded cheese and crumbled bacon... I'm telling you, these are better than what any restaurant could make!

    I'm so glad you like them. They are quite a hit here at "Bedlam Manor".

    Now forget the onion; add 4T brown sugar; add 1/8 C pecan pieces; 1/4 tsp. maple flavoring; use sweet potatoes instead of white potatoes. Fry in sweet bacon grease (add some maple syrup to the melted grease and stir it around until blended). Now you have sweet potato casserole pancakes.

    Oh yum, I made up a batch of mashed potato pancakes to serve with dinner the other day, and there weren't any left over for breakfast, that's for sure!

    I've been experimenting some with this recipe, thinking that it might be a tad healthier if they weren't fried (I know, they still contain potatoes, butter, and cheese, but work with me! ). First, I tried baking them in half full muffin-cups (sprayed with cooking spray), but they were a bit too soft in the middle for my liking. This morning, I took my toaster oven's pan, lined it with parchment paper, lightly sprayed it with cooking spray, and spread the remaining mixture out in one thin sheet (about the thickness of a pencil eraser). I then lightly sprayed the top, and baked at 425F for half an hour. Next, I peeled off the paper, and cut it with a pizza cutter. Served with ketchup/hot sauce, it was pretty good, and I could see cutting them into squares or strips as a fun appetizer (served with sour cream and chives on top, or with a dipping sauce). Next time, I think I'll use a larger sheet pan to spread the mixture out thinner, for slightly crispier results. Ouuu... mashed potato fries, anyone?
