    Thumbs up Easy Biscuits

    These quick and painless biscuits are terrific with bits of meat and gravy, or butter and honey!

    Biscuits

    Ingredients:
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 2 teaspoons sugar
    • 1/2 teaspoon cream of tarter
    • 1/4 teaspoon salt
    • 1/2 butter, margin, or shortening
    • 2/3 cup milk
    Steps:
    1. Mix together dry ingredients
    2. Cut in butter, margin, or shortening until the mixture resembles course crumbs (a pastry blender is the perfect tool for doing this)
    3. Make a well in the center and pour in the milk. Stir until combined.
    4. Turn dough out onto a lightly floured surface and knead for 10-15 strokes until smooth.
    5. Gently roll or pat the dough until about half an inch thick, then cut with the desired size biscuit cutter.
    6. Place the cut dough pieces about an inch apart on an ungreased baking sheet.
    7. Bake for 10 to 15 minutes in a 450 degree F oven until golden

    I love biscuits and usually find a way to have them at least 2 times a week. I like to put other things in them, such as cheese, or shredded Swiss cheese and shredded ham. Then it's almost a meal.

    I love biscuits, too!! When my dad was living, it was his "thing" to make biscuits every Sunday morning before he went to church and on Sunday afternoons, it was my thing, to raid the kitchen and have his leftovers!! He made biscuits an old fashioned way...with mayonaise and although I hate the condiment, I loved what it did to his biscuits!! I buy ready-made ones at the local farmer's market, but what I wouldn't give to have another one of his!!

    Recipe for mayonnaise biscuits

    INGREDIENTS

    * 2 cups self-rising flour (OR...remove 4 tsp. of flour, add 3 tsp. baking powder, and 1 tsp. salt.
    * 1 cup milk
    * 6 tablespoons mayonnaise

    DIRECTIONS

    1. Preheat oven to 400 degrees F (200 degrees C).
    2. In a large bowl, stir together flour, milk, and mayonnaise until just blended. Drop by spoonfuls onto lightly greased baking sheets.
    3. Bake for 12 minutes in the preheated oven, or until golden brown.

    These are fabulous. Add some shredded cheese to the mix, or Parmesan cheese. Shredded ham is good, too.

    Thanks Trudy!! Even the smell of mayo makes me nauseous; but I will give this recipe to my sister, who willl enjoy making them and will share as part of the deal before she gets the recipe!!
