Easy Pudding Cakes

Here's an easy way to use boxed pudding mixes to flavor boxed cakes!

Ingredients:

1 box cake mix
1 box pudding mix
3 eggs (if your mix calls for 4 eggs, use 4)
3/4 cup oil
3/4 cup milk

Method:

Combine dry ingredients. Combine wet ingredients. Mix the two together. Cook in two pans according to the directions on the cake box.

For mine, I used Simply Organic's coconut pudding mix with Simply Organic's vanilla cake mix. For the icing, I made my own (measurements are approximate): 3 ounces softened cream cheese, 3 Tbs softened butter, 3 Tbs coconut cream, 1 Tbs rum, 1/3 cup shredded coconut, 3 cups powdered sugar. After icing the cake, I patted on toasted coconut for color, crunch, and flavor. Yum!
